Correlation of physicochemical and sensory properties to the response of nanofunctionalized optical-fiber sensors in wines produced Guanaiuato

Currently, around 20 vineyards are distributed in the state of Guanajuato, mainly in the cities of San Miguel de Allende, Dolores Hidalgo, and Guanajuato. These vineyards need quality assessment for the produced wines, which involve time-demanding tests and diverse equipment to measure different parameters.
The number of samples needed to carry out some tests is often large, and these are discarded after the tests, resulting in an economic loss for the producers. It is therefore beneficial to develop tests based on optical fiber sensors, that need less samples, can measure multiple parameters at a time, and that do not require solvents or disposable plastic dishes, required in sensory analysis, that have a negative impact on the environment. The functionalization of the fibers with nanomaterials (nanofunctionalization) adds new possibilities to the development of fiber optic sensors, including sensitivity to chemicals the bare sensor could not detect, higher sensitivities and selectivity of chemicals.
